that is to say . . . a Cheese and Whiskey Pairing event, On Tuesday February 20 at 7:00 pm

Dr. Rosenberg teaches about the world of cheese and the wide varieties, differences, and complexities that exist with names like Humboldt Fog, Red Leicester, Beemster 18 month, Red Witch, Bleu d’Auvergne, and more.
Then Pat Redmond (Father Paddy) teaches about the Whiskies and their significance, styles and uniqueness as we try brands such as Redbreast, Lagavulin , Michter’s, Bowmore, and Teeling amongst others.

Dr. Rosenberg received his B.Sc. from the Hebrew University in Jerusalem and his M.Sc. and D.Sc. degrees (Food Engineering and Biotechnology) from the Technion, Israel Institute of Technology. After serving for several years as the CTO of the largest cheese manufacturer in Israel he joined in 1990 the Department of Food Science and Technology at UC Davis.
Dr. Rosenberg’s research program addresses topics related to: milk processing, cheese making science and technology, cheese quality attributes, cheese Terroir as well as authentication and regional origin of dairy and food products.
Dr. Rosenberg teaches undergraduate and graduate courses in dairy and cheese chemistry & technology and instructs cheese making and milk processing courses to American and International dairy industries. Dr. Rosenberg serves as a judge at national and international cheese contests.
Dr. Rosenberg has published more than 100 scientific papers and has delivered numerous presentations at conferences and professional meetings all over the world.
